It’s named something sauce because this is one of those recipes tailored to leftovers or what ever happens to be in season. Or, whatever you need to get rid of in your fridge before it goes off for that matter.
It starts with a basic tomato sauce and it’s up to you from there…
Something Sauce
2 tablespoons Olive Oil
1 medium Onion
Salt & Pepper
1 teaspoon Dried Parsley
1 teaspoon Dried Basil
1 teaspoon Dried Oregano
1 to 1/2 teaspoon Crushed Red Chili Flakes
1 12oz. can Diced Tomatoes
1 to 1 1/2 cups Water
3 tablespoons Tomato Paste
In a large pan, add the olive oil then finely dice the onion and saute on medium heat for 5 minutes. Add the salt, pepper, dried herbs and chili. Add the diced tomatoes and about a cup of water.
From here, the additions are pretty much endless. Olives, mushrooms, sausage, artichokes; you get the idea.
Add to your heart’s content then reduce the heat to a simmer and cook for 30 minutes.
Stir in the tomato paste to finish and thicken the sauce.
Serve over pasta or top grilled baguette for a great appetizer.
