Someone asked why I wasn’t going to read all the classics, or train to run a half marathon or just, do something more meaningful than watch a new movie every Saturday.
Having goals to fill your summertime is an undertaking that must be pleasurable to you.
In other words, one woman’s Adrien Brody is another’s Eugene Onegin.
Dashing madly from activity, to event, to drop off, to pick up, is a daily chore especially during the summertime. I thought a nice brisk sit, as Erma Bombeck
once said, was all the exercise I could handle this summer.
I found once I got into the movie groove the feeling of losing yourself to a good story was something I’d missed in the past couple of years.

The other thing I vowed to do this summer was to re-institute milkshake Friday. It was something the kids and I did when they were little. We’d go and have a milkshake at the ice cream shop or fast food joint to get us out of the house. These days however, they only show up to be fed, sleep or use the wi-fi connection.
Friends, I know how the Marriott feels now.
The milk shakes turned out great, and, on the occasions that we’d all be in the same place at the same time we had a nice mother and son(s) shared brain freeze.

The final thing on my list was to have lunch with my husband at least twice a month. Well that didn’t happen…
We have lunch every week! Thanks to Devour and their wonderful sandwich truck that stops by his office on Thursdays we can have a lovely picnic in the parking lot.
If you live in Eugene Oregon I’d highly recommend calling and getting the Devour VW Van to come by your place of business. Only not at noon on Thursday’s that’s OUR time!

I feel quite accomplished! I’ve rediscovered a few things I enjoy, but also somethings that probably should be left as a fond memory.

As you may remember, I posted a list of the things I’d hoped to accomplish this summer. Some were grand aspirations and some involved me sitting for hours looking at the glowing rectangle mounted on my wall.

So, first in the “not so much” column goes:
Go on evening drives
We did an extraordinary amount of driving this summer. Unfortunately none of it was for pleasure. A lot of twoing and froing related to family matters which I mention very briefly here I might go into it a little more in the future…i’m still thinking about it.
Anyway, we reached a point where we never wanted to sit in the car again. Plus we had probably spent a small fortune on gas so…
“Go on evening drives”….not so much.
Second Visit the U of O art gallery (Jordan Schnitzer Museum of Art) and take the bus.
When I was a student there I would spend down time in the gorgeous court yard and remember it fondly. It was a good idea, but I never got around to it. Instead of going and looking at art, I stayed home and made art:

I also completed 4 of the 5 things I had in mind on my life list.
#43 Get my dental issues under control.
So um, I haven’t been to the dentist in over 7 years. I should have gone and I’m sorry I didn’t because then I wouldn’t have had to pay thousands of dollars all in one go to upgrade all the old and crumbling dentistry in my mouth. I did, however get to wear these cool glasses whilst I was drilled and filled.

I suck still, but, I have a good understanding of the game and how to play. I used the iChess Lite App and some videos from YouTube.

The continuation of What I did this summer coming after the crazy week of back to school preparation is over.


After a lovely week of just 70 something degree weather yesterday it shot back up to 86. No wait that’s just how hot it was in my kitchen.

Using the oven was not an option.
It was also one of those situations where I’d neglected to plan anything for dinner and it was too late to go to the store.
Bad Mommy! No ice cream!

So, I went scrounging in my cupboards and in the fridge. This is what I found:

1 Box Bow tie pasta
2 lemons
1 cup grated Parmesan cheese
1/2 cup mushrooms
2/3 cup heavy cream
3 Eggs
2 tablespoons parsley
1/2 cup chopped bacon

Prep:
Zest and juice the lemons
Roughly chop the mushrooms, parsley and bacon.

Whisk together the heavy cream, eggs, parsley, lemon juice and zest, and half the Parmesan cheese.
If cooking immediately set aside, If you’d like to make the sauce in advance, you can put it in the fridge for later.

Brown the bacon and mushrooms and cook and drain the pasta.

Combine the cooked pasta and the browned bacon and mushrooms, stir well.
Next, pour in the egg and cream mixture and stir until mostly absorbed by the pasta. You can mix in a little more cheese if you want.
I served it with an arugula and tomato salad.

The great thing about Lazy Day Pasta is you can use just about anything to accompany your sauce.
Here are some ideas
Spinach
Arugula
Sautéed Carrots
Frozen peas
Cubed ham…. Whatever you have leftover really.

The “flicker” effect you see in the film is created because these early movie cameras were hand cranked.
