This recipe requires a bit of attention. That is to say, you shouldn’t stray far from the oven as you’ll need to come back every 10 minutes. Setting the timer helps me remember, rather than a burnt smell in the house.

Recipe: Honey Granola Cereal
8 cups whole rolled oats
½ cup canola oil
1 cup honey
Teaspoon vanilla extract
Pinch of salt
Preheat oven to 350 degrees.
Measure and pour oats into a large bowl.
In a small sauce pan mix: oil, honey, salt and vanilla. Heat over medium high, stirring often. Bring just to a boil.
Pour honey mixture over oats and stir until oats are completely covered.
Divide oats between two ungreased sheet pans. Spread the mixture into a single layer on the pans.
Place in the oven for ten minutes. After ten minutes remove from oven and scrape the browned granola from the edge of the pan and redistribute the granola into a single layer again. Place back into the oven for another 10 minutes.
At this point I usually call it quits because I like my granola lightly toasted, if you like yours extra toasty, scrape, fluff and put it back into the oven for another 5-10 minutes.
Allow to cool and crisp up for 15 minutes on the counter before scooping into a container.
Note: After granola is cool you can add dried fruit, toasted nuts or chocolate chips.
